A friend tipped me off about the petite tender medallions at Straub's. They're relatively inexpensive for a tender cut of beef ($11.99 per pound, which feeds two at our house, with leftovers). All of the butchers at Straub's, including Steven above, are very helpful, so when I told them that I wanted to like the medallions but had always found them a bit bland, they suggested that they season them for me.
Steven seasoned the medallions in a marinade of olive oil and Citizens Kane dry rub. He then vacuum-sealed them in a plastic bag so they can marinate quickly. They're ready to cook on the grill (in warmer weather), broil, or in a grill pan on the stove top when you get home. They can also remain in the refrigerator soaking up the spices for a couple more days. If you're a meat eater who likes spicy foods, I think you'll like these. Just ask butchers, Steven, Aaron or Brian to "fix you up," as they say. There is no extra charge for this service.
Something you may not know about Straub's is that they promote the staff from within. Steven was working the check-out line until July, when he was asked if he would like to train to be a butcher. He accepted the offer and said that now he just can't wait to get to work. Aaron (not pictured), was working in the deli department before moving to the meat counter. Apparently the deli crew hated to see him leave that department, but he too loves being a butcher.
Another friend mentioned how much she likes the new Kale & Mango salad in the deli case at Straub's, $9.99 per pound. The salad contains mango, coconut and cashew pieces, and is lightly dressed in a citrusy vinaigrette. The combination of the salad and petite medallions would be a really nice dinner for Super Bowl Sunday, or anytime.
